Shanour is the chef of chefs. Truly. He must have a Michelin star by now. Shanour is a highly skilled pro of pro chef who has worked in Amsterdam's top restaurants. And though he has all the fancy tricks from working in meat and dairy-based kitchens, his love of the plant-world has taken his skills in a whole new direction with veganism. He's a wonder to learn from. And his food has its own delicacy and art that's a teaching for us all. Shanour taught for us on retreat in 2012 and is a lead chef on this project. He tested all the recipes before we published them. Don't get caught messing about in the kitchen though - he's not messing around!
